yup the salted fish and lup cheong should only add just before last cook maybe ten minutes before served

you use claypot or rice cooker or oven to make the claypot rice?

sane seriouly since you so health conscious I share with you this
I know the HCP wok easy and fast to cook BUT

because of the high compressed heat in the pan it will cause the nitrates in foods to breakdown and that causes cancer
nitrates by itself still not so bad but at high heat it changes

i always use low- medium heat because high heat will spoil the wok .. u think is ok ... though nowadays i cook mostly by steaming.
