Fish ball need not be big, but I feel must be bouncy. After all the mouth is limited to certain size, unless you are good at deep throat. Hehehehe.

Hand make is of cos better as the maker will slam the fish meat mesh on the pail to "trap" the air in. Theory same as teh tarlek, or roti prata. Machine make will not do that and more over machine make will add starch to save cost. Some add egg white oso, like dodo.
