The fish that I've whipped up last nite, minimal seasoning juz with seasalt and fried it with 2 tablespoon of olive oil. I like my fried fish to be crispy and charred!

My past "works"

KL hokkien mee, sinful because I use pork lard to cook this ... and also I will dice the pork lard and fried into crispy bites to go with this ..



Braised chicken wings, the most easiest and convenient method of cooking - braising and u can braise almost everything .. "san cheng rou", tau pok, tau kwa, egg, tau kwee, mushroom, whatever u can throw in .. if u r lazy to cook so many dishes!!

So good, then u should be v good in choosing fishes! I went marketing every week to "study" different kind of fishes and the best method to cook it .. Preferred to clean the internal by myself too ... and my friends are like

To test the freshness, we should look at the eyes/fish scales to see whether is shinning, check the fish grill to see whether it's red right?

Heehee because I m using SLR so it's auto set and I just snap snap snap, not really good phototaking skills.

U should check with the organiser, he say he's preparing the sea food ... n my guess is he should be preparing stingray .. hee hee ...

Actually no need see the gills. Just press the fish, if the meat is firm, then its fresh lo. And also whether the eyes are shiny or not.

Fish scales shining or not can be tempered with. Basically, I just splash water on the fish itself and the fish scales will look shiny liao

I m very kiasu, I will compare stall A to Z just to see the freshness .. but I m not the type who go around to poke poke and never buy lah ....

My friends who walk with me almost fainted, they say need to walk so many rounds just to buy fishes

Not only fishes, I find it very interesting to see the sotong, la la, prawns etc , luv going to the wet market! hee...
