The Char Kway Teow here has lots of bean sprouts and gu chai (Chinese chives: green onion). Therefore, it balances out the oily and fat of lup cheong, lard and noodles. The noodles are a mixture of flat rice noodles and thin egg noodles. It is fried in dark soy so it has a blackish look. What is interesting? - Although the signboard is No 18, it is the 17th stall at Zion Riverside Food Centre on Zion Road - It is listed in the MakanSutra Singapore Food Masters 2007, acclaimed with food award Singapore Best Food Online Directory - Although this stall is difficult to find, the queuing line and its wonderful smell would show you the way to it Notes - It takes 20-30 minutes to queue, go after 2 PM to avoid queuing - Noisy atmosphere

Fish-head curry's the star at Chye Lye Restaurant.
Truth be told, there is no need to head across the Causeway. There is good fish-head curry to be had in Sembawang. Chye Lye Restaurant's name in Mandarin bids customers to keep coming back and its Curry Fish Head ($25, above) is good reason to do so. Like Kam Long's, it is not so full of chilli that the gravy blows your head off. Instead, it is just spicy enough, with lots of tang from tomatoes and a flavourful spice paste. The gravy is thick enough to coat rice but not so rich that you cannot slurp spoonfuls of it. Fresh and meaty fish heads go into the curry and the tureen comes with generous helpings of ladies' fingers too. More beancurd puffs would be good. They soak up flavour like sponges. Although the fish-head curry is the star of the show, the zi char eatery has what my friend calls "core dishes" which are just as good. One of these is Egg With Preserved Radish ($7, above), an expertly made omelette with a thick and fluffy centre and lots of chye poh. Preserved radish can sometimes be too salty, but here it has a slightly sweet flavour and is beautiful with the egg, brown outside but not overcooked inside. Salted Fish With Bean Sprouts ($6, above) is another simple dish done well. The sprouts remain crunchy and there is no need to fight over thick pieces of salted fish simply because they are generous with it. Deep Fried Crispy Chicken ($15 for a whole chicken) comes burnished a dark, appetising brown, the result, I am sure, of patient ladling of hot oil over the bird. While the skin is excellent, the breast meat tends to be a little dry, so perhaps it is a good idea to fight over the drumsticks.
